Lemony Meringue Cookies

.

I am always playing around with new cookie recipes and in summer there is nothing quite like the refreshing taste of lemon. Meringue is light and fluffy and not as heavy as a regular cookie. These cookies are lemony with a hint of coconut sprinkled on top and are perfect on a hot summers afternoon, to pack for a picnic or to bring to a pot-luck!

Lemony Meringue Cookies

4 Egg whites, room temperature
1/2 tsp Cream of tartar
1 cup Sugar
1 tsp Lemon extract

Coconut for sprinkling

Beat egg whites and cream of tartar till soft peaks form. Slowly add sugar a bit at a time, while continuing to beat.

Add lemon extract and beat till stiff.

Drop by the spoonful onto cookie sheets lined with parchment paper. Bake at 225 F for 1 hour. Turn off the oven and let the cookies sit for an additional hour.

Rainy Day Cookies

The weather has been poor all week, kind of on the cool side, windy and rainy. Today seemed to be the worst weather of all, so bad,in fact, that we did not want to leave our house. So what do you do on rainy summer days? Normally on rainy days you will find me in my kitchen, with the smells of chocolate and spicy cinnamon surrounding me and wafting through the entire house, enticing the children and warming and soothing my soul.

There is something about the comfort of baking yummy treats that soothes me like nothing else - the mixing, the pouring, the sweet and spicy smells, it warmth coming from the oven, and the way everyone in the house, even the dogs, start to gravitate towards the kitchen.

Today I made two stand by favorites - Double Chocolate Espresso Fudge Ice Cream Sandwiches and Snickerdoodles. We to cheer up our cranky moods and the second to bring comfort and calm (honestly, I have a cookie every feeling under the sun and will take almost any opportunity to bake up a batch!).

Double Chocolate Espresso Fudge Ice Cream Sandwhiches:

1 ¼ cup Margarine
2 cups Sugar
2 tsp Vanilla
2 Eggs

1 ½ tsp Instant espresso powder
¾ cup Cocoa, shifted
2 cup Flour
1 tsp Baking soda
½ tsp Salt
1 – 2 cups Chocolate chips (semi-sweet or dark)

Vanilla ice cream

Cream together margarine and sugar. Add vanilla and eggs and mix well, until fluffy. Add dry ingredients and chocolate chips and mix together until incorporated. Drop onto cookie sheets and bake at 350 F for 8 minutes (or until the outsides are done and the center is just about set – do not over bake your cookies if you want them chewy, if you want them crispy cook for an additional 2 minutes).

Let the cookies cool on the cookie sheet for 2 – 3 minutes before removing them and let them sit for an additional 5 minutes. In the mean time, grab the ice cream from the freezer.

Take two warm cookies and put a scoop of ice cream in between. Eat some place that is easy to clean, the warm cookies starts to melt and soften the ice cream - yummy!

This is guaranteed to cheer up just about anyone and is a good celebration cookie as well (I often make these to celebrate the kids first day back at school – but I make them while they are gone, while I dance gleefully to loud music around my kitchen!)!
.
Snickerdoodles

½ cup Butter
½ cup Shortening
1 ½ cup Sugar
1 tsp Vanilla
2 Eggs

2 ½ cup Flour
2 tsp Cream of tartar
1 tsp Baking soda
¼ tsp Salt

Topping:
2 tbsp Cinnamon
2 tbsp Sugar

Cream together butter, shortening and sugar. Add eggs and vanilla and beat until fluffy. Add dry ingredients and mix until well incorporated.

Form into small balls and roll in the sugar and cinnamon mixture. Place on cookie sheet and bake at 400 F for 8 – 10 minutes.

These are best enjoyed with a cup of tea, guaranteed to sooth frazzled nerves and help bring you a sense of calm.

Watch out! Bathing Suit Season Here we Come!!!

Oh no, with all the snow and cold weather, bathing suit season kind of snuck right up on us. I look outside my window and I can still see some snow – like the snow man that is half melted made by some young kids who thought a May snowstorm was fun. Yet I know that our outdoor pool opens in less then two weeks time and temperatures for the rest of the month are suppose to continually rise (PRAISE THE LORD!!!).

There are many super easy things that we can do that does not involve a complete overhaul of any sort. I am talking about consciously eating foods that naturally aid in boosting our metabolism and aids weight loss. So, for those of us that indulged in a few too many cookies (moi), it is time to start thinking about what we can do to kick start our summer season.

Fibre: Fibre gives your metabolism a boost simple by taking longer for the food to digest. High-fibre foods like beans, fruit, vegetables and whole grains therefore help burn more calories

Yogurt (and High Calcium Foods): Yogurt is a “super food”, it is loaded with calcium, protein and good bacteria. Calcium aids in natural weigh loss because it speeds up the process of breaking down the fat content of fat cells.

Vitamin C: Eating a diet high in Vitamin C – such as apples, red peppers, berries, broccoli – helps your body burn fat by liquefying it so the body can easily flush it out of the system. Broccoli is not only high in vitamin C, but also calcium, which also aids in weight loss.

Apples and berries: Pectin (found in many types of fruit) restricts the amount of fat our cells can absorb; it forces the cells to discharge fatty deposits so aiding natural weight loss, although for this to be the most effective you should eat them on an empty stomach.

Garlic: Garlic assists in the reduction of fatty deposits – in other words they are fat busters and are good for natural weight loss.

Whole grains and oatmeal: Not only do these keep you feeling full longer, but they increase your energy and naturally increase your metabolism burning fat and calories.

Olive oil: Olive oil is the oil of choice. It comes from natural sources, helps to keep your cholesterol levels down and is one of the fat burning foods.

Water: Are you getting enough? Probably not. An easy way to see how much you should drink is take your weight, divide it in half and that is how many ounces you should drink (For example, if you are 150 lbs, you should drink 75 oz or about 9 glasses of water a day). When you drink water it flushes out your system, removes toxins, and aids in food in their natural fat burning properties.

Green Tea: Studies show that green tea extract boosts metabolism and speeds up the rate at which your body burns fat. Green tea is said to be mood-enhancing tea and also contains anti-oxidants with anti-cancer and heart disease properties.

Hot Peppers and Spicy foods: Eating hot peppers can speed up your metabolism (up to 25% after eating!!!) and can also cool your cravings. That is good enough for me to add a bit of spice – but to me it’s not really good till you sweat!

Cinnamon: Cinnamon naturally lowers blood sugar levels – which is one of the most effective ways to maintain fat-burning capacity. Our blood sugar level can affect how hungry and how energetic we feel. It also determines whether we burn fat or store it. Therefore, adding some cinnamon to our food can helps fat not to accumulate in the body.

Well all this talk of food is making me hungry!!! Do you think that Cinnamon Oatmeal Raisin Cookies would fall into these food groups???!!! Sorry, I couldn’t resist, it is just a cookie thing I guess!!

Blessings, Christine

My FAVORITE Peanut Butter Cookies

Well if you know me at all (or have read any of my cookie posts) you know that I LOVE COOKIES! It’s an addiction really, I love to bake cookies and I love eating cookies, honestly I can't even tell you which I love more. I don’t know what I am going to do when all my kids move out and I have no one to help me eat all those cookies! Although my dear son Jesse promises to live within walking distance of my house so that him and his kids can come to our house for after school and work snacks, bless his thoughtful heart.

Out of all the cookies I make, the simplest is always the best.

Peanut Butter Cookies

1 cup margarine, softened
1 cup peanut butter
¾ cup brown sugar
¾ cup white sugar
2 eggs

2 cups flour
1 tsp baking soda
1 – 2 cups chocolate chips (optional)

Cream together margarine, peanut butter and sugar till light and fluffy. Add eggs and mix well. Add flour, baking soda and chocolate chips and stir to incorporate.

Drop tablespoon amounts onto cookie sheet and bake at 375 for 7 – 9 minutes.

Enjoy with a big glass of milk!

WFMW - Mocha Meringues

Two of my children absolutely LOVE meringue cookies and my daughter will choose something coffee flavored everytime. So I combined their love of coffee and meringue to come up with this cookie recipe.

4 Egg whites (preferably room temperature)
1 1/3 cup of Sugar
1/2 tsp Cream of tartar
8 tsp Cocoa, shifted
2 tsp Espresso powder

Beat egg whites in glass or metal bowl until soft peaks form. Gradually add in sugar until stiff peaks form and mixture is well combined and glossy. Stir in cocoa and espresso powder.

Drop spoon sized amounts on baking sheet lined with parchment paper (will make 2 - 3 dozen) and sprinkle the top of each cookies with chocolate sprinkles. Bake at 225 for 45 - 60 minutes. Turn oven off and leave cookies in the oven for an additional hour. Store in an airtight container.

When only chocolate will do!!!

You know those times were only chocolate will due??? Well tonight was one of those nights!

I woke up on the wrong side of the bed this morning and no amount of coffee seemed to fix my mood, all the kids argued with me and with each other this morning, traffic was bad while I was driving them to school and road rage seemed to be rearing its ugly head, I got home to find out that one of my dogs threw up on the carpet - twice, cleaned it up to have the other dog start throwing up…super great, fiddled my morning away doing nothing productive other than receiving yet ANOTHER dog who promptly lifted his leg and peed on the side of my chair (thanks mom and dad!...have a nice trip...by yourself...with room service...and no barfing dogs), left to go do lunch room and got told it was going to be an OUTDOOR recess (well it is only -22C with the wind chill, so come on, OF COURSE it is not too cold to be outside!), came home and found my eldest sitting at the computer doing NOTHING productive (oops, forgot he a half-day at school), told him that I needed to go upstairs and be by myself for a bit and try and do some work, dogs barked continuously...at each other...at my son, at people/dogs outside...at the wind moving the trees, went to go get the younger three from school and praise the Lord all three boys left the minute we got home to have dinner with Granny (proof the Lord is merciful!)...so I did the only thing I could do - MAKE COOKIES!!!

My closest friends know that I make alot of cookies (and therefore eat alot of cookies), but I especially feel the desire to make cookies when celebrating special occasions, like the kids first day of school in the fall, or on those days where nothing goes right and having a warm cookie (okay, cookies) is the only fix. There is something therapeutic for me in the mixing and measuring, the smells that fill my entire house, and finally that first bite...like a little gift from heaven!

So tonight, after my day, I needed some serious chocolate and made Double Chocolate Espresso Fudge cookies…yum…do we need any further proof that God IS good!

Christine

2 Eggs

1 – 2 cups Semi-sweet chocolate chips (depending on your preference)
