Happy 142nd Birthday Canada!!


Here in Canada we are celebrating Canada Day! My family and I celebrated by going to local celebration where there are lots of different performances - dancing, singers, storytelling, bands and at the end of the night there are fireworks.

Since we did not leave till late afternoon (the fireworks start at 11:15 at night), I had time to whip up some Canada Day Cupcakes!

Canada Day Cupcakes with Butter cream Icing:
* Recipe found in "Cupcakes", by Ceri Hadda

1/2 cup butter or margarine
3/4 cup sugar
2 eggs
1 egg yoke
2 tsp vanilla
1/2 cup milk
1 1/2 cup flour
1 tsp baking powder
1/4 tsp salt

Mix dry ingredients and set aside. Cream together margarine and sugar till fluffy, add eggs one at a time and add vanilla. Add flour alternatively with the milk, starting and ending with the dry ingredients.

Bake at 350 F for 14 - 16 minutes (I think Americans need to bake for 20 - 22 minutes...I don't get that!?). Makes 12 cupcakes.

Frost with your favorite butter cream icing.
